Pumpkin Smoothie Bowl

INGREDIENTS

  • For the Smoothie Bowl:
  • ¾ cup (6 ounces) Pillars Vanilla Yogurt
  • ½ cup canned pumpkin purée
  • 1 large frozen banana, in chunks
  • ½ teaspoon pumpkin pie spice (sub: ¼ teaspoon ground cinnamon and a pinch of nutmeg and ginger)
  • Optional Toppings:
  • Sliced apple or pear
  • Toasted coconut flakes
  • Granola
  • Toasted pepitas, pecans, or walnuts
  • Extra sprinkle of cinnamon
  • Chia seeds
  • Fresh blueberries or raspberries
  • Hemp Hearts
  • Cacao Nibs
  • Almond or peanut butter
Pumpkin Smoothie Bowl with Pillars High Protein Drinkable Greek Yogurt

Thick, creamy, and packed with fall flavor, this pumpkin smoothie bowl turns Pillars Vanilla Yogurt and real pumpkin into a spoonable breakfast that tastes a little like pumpkin pie, or better yet, pumpkin cheesecake. The secret is using frozen banana chunks which keeps the base thick enough to hold plenty of crunchy, colorful toppings.

Prep Time – 5 minutes
Yield – 1 generous bowl

DIRECTIONS:

  1. Add the Pillars Vanilla Yogurt, pumpkin, frozen banana, pumpkin pie spice, and maple syrup (if using), to a blender.

  2. Blend until completely smooth and very thick, stopping to scrape down the sides as necessary. If your blender needs a little help, add another splash of Pillars.

  3. Spoon into a shallow bowl and smooth the top.

  4. Go big on the toppings! Arrange your favorites like fresh fruit, seeds, nuts, coconut flakes, and granola over the bowl. Finish with a drizzle of nut butter and an extra sprinkle of cinnamon.

TIPS:

Keep a bag of frozen banana chunks in your freezer. Whenever you have bananas getting too brown before you can eat them, just peel and break into large chunks. Store in the bag for the moment the smoothie craving strikes.
